Keto Protein Bread
Low-carb, protein-rich bread, perfect for keto diets, sweetened with Best4U.
Ingredients
- 2 tablespoons Best4U Allulose and Monk Fruit sweetener
- 60 g ground flaxseeds
- 20 g chia seeds
- 75 g ground almonds
- 75 g ground hazelnuts
- 5 g salt
- 100 ml water
- 120 g plain yogurt or cottage cheese
- 4 eggs
- 8 g baking powder
- 50 ml additional water
- Seed mix to taste

Separate egg yolks from whites carefully. Refrigerate whites. Line a 20 cm rectangular loaf pan with parchment paper.

In a bowl, combine flaxseed, chia, hazelnut, almond, and salt. Add the first amount of water, yolks, yogurt, and Best4U sweetener. Mix well until you have a moist dough. Cover with a cloth and let rest for 30 minutes.

Preheat oven to 180°C. Add baking powder and remaining water to the dough and mix well. Beat reserved egg whites to stiff peaks with a pinch of salt.

Add 1/3 of whipped whites to the dough, mix gently, then add another third, folding in. Add remaining whites and mix gently until homogeneous.

Fill the mold and top with nuts or seeds. Bake in the lower half of the oven for about 75-80 minutes. Check after an hour to prevent burning on top.

Check doneness with a toothpick. Wait 10 minutes out of the oven before unmolding and cooling completely on a rack.
