Ingredients

  • 1/2 cup almond or oat flour
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/3 cup ghee butter or avocado oil
  • 1/4 cup + 2 tablespoons Best4U sweetener
  • 1/3 cup milk of choice
  • 2 tablespoons unsweetened orange juice
  • 2 egg whites or equivalent substitute
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange zest
  • 1 1/2 cups grated carrots
  • 2 tablespoons golden raisins
  • 1 tablespoon finely chopped walnuts

Preparation

    Preheat oven to 190 °C and grease a loaf pan with cooking spray.

    Mix whole wheat flour, almond flour, baking powder, baking soda, cinnamon, and ginger in a bowl.

    Beat the oil with Best4U sweetener, add milk, juice, eggs, vanilla, and zest; fold in carrots, raisins, and walnuts.

    Incorporate dry ingredients, pour into the pan, and bake for 45 minutes or until a toothpick comes out clean. Cool for 10 minutes, unmold, and let cool completely.
