Sugar-free Carrot Bread
Moist cake with warm spices, sweetened with Best4U and without refined sugar.
Ingredients
- 1/2 cup almond or oat flour
- 1 cup whole wheat flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/3 cup ghee butter or avocado oil
- 1/4 cup + 2 tablespoons Best4U sweetener
- 1/3 cup milk of choice
- 2 tablespoons unsweetened orange juice
- 2 egg whites or equivalent substitute
- 1 teaspoon vanilla extract
- 1 teaspoon orange zest
- 1 1/2 cups grated carrots
- 2 tablespoons golden raisins
- 1 tablespoon finely chopped walnuts

Preheat oven to 190 °C and grease a loaf pan with cooking spray.

Mix whole wheat flour, almond flour, baking powder, baking soda, cinnamon, and ginger in a bowl.

Beat the oil with Best4U sweetener, add milk, juice, eggs, vanilla, and zest; fold in carrots, raisins, and walnuts.

Incorporate dry ingredients, pour into the pan, and bake for 45 minutes or until a toothpick comes out clean. Cool for 10 minutes, unmold, and let cool completely.
