Yogurt and Mango Jelly

Two-layer dessert: creamy yogurt and tropical mango sweetened with Best4U.

Ingredients

  • 2 cups low-fat Greek yogurt
  • 1 cup warm skim milk
  • 21 g gelatin, hydrated and melted (for yogurt)
  • Coconut oil for greasing the mold
  • 3 cups mango pulp, cubed
  • 1 cup coconut milk
  • 3 tablespoons Best4U sweetener
  • 1 tablespoon lemon zest
  • 21 g gelatin, hydrated and melted (for mango)
  • Raspberries and reserved mango sauce for garnish

Preparation

    Mix yogurt with warm milk and add gelatin in a thin stream until integrated. Pour into a greased mold filling halfway and refrigerate until set.

    Blend mango pulp with coconut milk, heat over low heat with sweetener and zest, stirring constantly.

    Add hydrated gelatin, mix and let cool slightly. Pour over the yogurt layer and refrigerate until set.

    Unmold, garnish with raspberries, and drizzle with reserved mango sauce before serving.
