Zucchini Bread

Moist and nutritious zucchini bread with pineapple and walnuts, sweetened with Best4U.

Ingredients

  • 6 egg whites
  • 1/4 cup oil of choice
  • 1/2 cup unsweetened applesauce
  • 1/2 cup Best4U sweetener
  • 2 teaspoons vanilla extract
  • 1 1/4 cup all-purpose flour
  • 1 1/4 cup bran (whole wheat) flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3 teaspoons ground cinnamon
  • 2 cups grated zucchini
  • 1/2 cup chopped walnuts
  • 1 1/2 cups crushed unsweetened pineapple

Preparation

    Preheat oven to 177°C. Lightly coat two 23 × 13 cm loaf pans with cooking spray.

    In a large bowl, add egg whites, oil, applesauce, Best4U sweetener, and vanilla. With an electric mixer, beat mixture on low speed until thick and frothy.

    In a small bowl, mix flours. Reserve 1/2 cup. Add baking powder to the small bowl with flour.

    Add flour mixture from small bowl to egg white mixture. With electric mixer on medium speed, beat until well combined. Add zucchini, walnuts, and pineapple. Stir until everything is incorporated.

    Adjust mixture with remaining 1/2 cup flour, adding 1 tablespoon at a time. Mixture should be thick, not creamy.

    Distribute mixture evenly between the two prepared pans.

    Bake for about 50 minutes, until a toothpick inserted in the centers comes out clean. Cool bread in pans for 10 minutes on a rack.

    Remove loaves from pans and place on rack. Let cool and enjoy.
