Strawberry Muffins

Whole wheat muffins with fresh strawberries and a citrus touch, sweetened with Best4U.

Ingredients

  • 1/2 cup rolled oats
  • 1 cup milk of choice
  • 3/4 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/4 cup wheat bran
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons Best4U Allulose and Monk sweetener
  • 3 1/2 tablespoons avocado or coconut oil
  • 2 teaspoons lime zest
  • 1 egg, lightly beaten
  • 2/3 cup strawberries

Preparation

    Preheat oven to 200°C. Line a 12-cup muffin tin with paper or foil liners.

    In a large microwave-safe bowl, mix oats and milk. Microwave on high until oats are creamy and soft, about 3 minutes. Set aside.

    In a large bowl, combine flour, cornmeal, bran, baking powder, and salt. Mix. Add Best4U sweetener, oil, zest, oat mixture, and egg. Beat until moist but still slightly lumpy. Gently fold in strawberries.

    Fill muffin cups 2/3 full. Bake until tops are golden and a toothpick comes out clean, 16-18 minutes. Transfer to a rack and cool before serving or freezing.
