Pistachio Muffin

Fluffy pistachio muffins with creamy filling, sweetened with Best4U.

Ingredients

  • 2 M/L eggs
  • 125 ml plain yogurt
  • 60 g ground pistachio
  • 60 g homemade pistachio cream
  • 70 g whole oat flour
  • 10 g baking powder
  • 2 tablespoons Best4U Allulose and Monk Fruit sweetener
  • More pistachio cream for filling (as needed)

Preparation

    In a bowl, beat whole eggs with yogurt and Best4U sweetener.

    Grind raw peeled pistachios. Add to the mixture along with oat flour, baking powder, and pistachio cream, and mix well.

    Line muffin tins with papers and fill 3/4 full with batter.

    Bake at 180°C for about 20 min and cool on a rack.

    Fill a piping bag or syringe with pistachio cream and fill muffins from the bottom, being careful not to overfill.
