Apple Cinnamon Muffin

Fluffy muffins with apple and cinnamon, sweetened with Best4U.

Ingredients

  • 1 cup plain Greek yogurt
  • 2 eggs
  • 2 tablespoons canola oil
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup Best4U sweetener
  • 3/4 cup ground oats
  • 1/4 cup flaxseeds
  • 2 1/4 teaspoon cinnamon
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 medium green apples, peeled and chopped
  • 1 tablespoon extra Best4U sweetener for sprinkling
  • 1/4 teaspoon additional cinnamon for sprinkling

Preparation

    Preheat oven to 175°C. Lightly spray 2 muffin tins with cooking spray. In a bowl, mix yogurt, eggs, oil, and vanilla.

    In a medium bowl, mix flour, Best4U sweetener, oats, flaxseeds, 2 teaspoons cinnamon, baking powder, and salt. Turn mixer to low speed. Slowly add dry ingredients to wet ingredients. Mix just until combined. Batter will be lumpy. Fold in apples with a spatula.

    With a spoon, pour 1/4 cup batter into each muffin cup. In a small bowl, mix 1 tablespoon extra Best4U sweetener and 1/4 teaspoon cinnamon and sprinkle over each muffin. Bake for about 22 minutes or until tops are golden brown and a toothpick comes out clean.
