Seed and Nut Cookies
Crunchy and nutritious cookies with seeds and nuts, sweetened with Best4U.
Ingredients
- 2 eggs
- 1 tablespoon Best4U Allulose and Monkfruit sweetener
- 1 pinch salt
- 100 g seeds of choice
- 100 g raw almonds (sliced, slivered, or diced)
- 70 g raw hazelnuts
- 2 tablespoons chickpea or oat flour
- Lemon zest to taste

Preheat oven to 160°C and prepare a large baking sheet with parchment paper or a silicone mat.

Place eggs and 1 tablespoon Best4U sweetener in a bowl. Beat lightly with a pinch of salt. Stir in seed mixture. Add almonds, hazelnuts, and chickpea or oat flour. Add a touch of citrus zest if desired.

Mix well, add another tablespoon of Best4U sweetener if needed, to get a slightly sticky and moist dough. Take portions and shape into flat rounds with a spoon or damp fingers.

Arrange on a baking sheet greased with a little coconut oil, close together. Flatten as much as possible, pressing down well, for crispier cookies. Bake for 20 minutes or until golden to taste. Cool on a rack.
