Fresh layers of yogurt, lemon, and sugar-free cookies for a creamy, guilt-free dessert.
Ingredients
- 2 cups plain unsweetened yogurt
- 2 tablespoons Best4U sweetener
- 1 teaspoon vanilla essence
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 14 g sugar-free gelatin, hydrated and melted
- 1 1/2 cups sugar-free vanilla cookies
- Lime slices for garnish

Mix yogurt with sweetener, vanilla, juice, zest, and gelatin until smooth.

Line a 16 cm ring with plastic wrap and place acetate around the inside.
