Fresh layers of yogurt, lemon, and sugar-free cookies for a creamy, guilt-free dessert.

Ingredients

  • 2 cups plain unsweetened yogurt
  • 2 tablespoons Best4U sweetener
  • 1 teaspoon vanilla essence
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 14 g sugar-free gelatin, hydrated and melted
  • 1 1/2 cups sugar-free vanilla cookies
  • Lime slices for garnish

Preparation

    Mix yogurt with sweetener, vanilla, juice, zest, and gelatin until smooth.

    Line a 16 cm ring with plastic wrap and place acetate around the inside.

    Alternate layers of cookies and yogurt mixture until the mold is full.

    Refrigerate for 40 minutes, garnish with lemon slices, and serve cold.
