Rice Pudding

Traditional rice pudding, creamy and spiced, sweetened with Best4U.

Ingredients

  • 250 g brown rice
  • 500 ml skim or plant-based milk
  • Peel of 1/2 lemon
  • 1 cinnamon stick
  • 1 tablespoon Best4U Erythritol and Stevia sweetener
  • Ground cinnamon for garnish

Preparation

    Soak brown rice in water for at least 2 hours.

    In a pot, place lemon peel, cinnamon stick, and 300 ml milk (we'll add the rest as cooking requires), heat until boiling.

    When it boils, add hydrated rice (previously drained) and lower heat (low but still bubbling).

    Cook for 1-1.5 hours stirring occasionally to prevent sticking and make it creamy, adding remaining milk as needed.

    Taste and when ready (should be nicely firm) turn off heat, add sweetener, and let rest.

    Cool in refrigerator, covered to prevent drying.

    Serve, sprinkle with cinnamon, and enjoy!
